Bonnie's Caprese Salad 4 creole tomatoes 2 large cucumbers (you can leave this out if you like) 2 med Portabello mushrooms Fresh Basil (to taste) Salt & Pepper Fresh Mozzerella Pearls or diced. Chop veggies (large size) in order listed layering each in the bowl in that order.  Add salt and pepper.  You may want to add finely chopped onions at this point for more flavor.  Toss thoroughly to ensure the tomatoes and cucumbers create a nice moisture to eliminate the need for dressing, although if you are a diehard dressing fan...go for it.  It's better for you without that crap.  :)   Anyway...Toss in the Mozzerella...and serve in individual salad bowls.  Yum. Oh yeah...one more thing.  Some people like this salad in slices, laid out on a plate...all pretty and everything. Works that way too...if you like.

2010 ...What a year. So many things happened. Life changing events. Unfortunately, most not so good...but I won't go there, here. The only thing that I will mention is that my camera was stolen on Halloween. So November and December photos were all taken with my point and shoot or my cell phone. I've gone through many of my photos for 2010 and the ones here are some of my favorites, but by far not all of them. Creation of the Quiche

Due to the recent theft of my camera and my almost miserable existance because of it, I've tried to find other ways to use my cell phone camera to pass the time until I get a new camera. This lead to an idea to put two things I love to do into one project. And so.... The Creation of the Quiche is born... Creating a quiche is a simple process which requires just a little time and effort to end with a scrumptious dish appropriate for breakfast, lunch, or dinner. This is just one version, but you can create your own version with your favorite ingredients. Begin by chunking the vegetables the way you would if you were making a soup! Large! And don't forget to save your compostables for the compost pile or worm bin. Nothing makes the process easy like a really good paring knife. Next you cook them in a little Mongolian Fire Oil and Olive oil. Slowly though. You want to get them to the point right before the onions start to turn clear.
